Step 1 - rinse 1 cup of quinoa (any flavor) I prefer Trader Joe’s brand

Add 2 cups of water and 1 cup of quinoa to 2 quart pot of boiling water (cover pan and lower heat and cook for 15 minutes)

Quinoa with chick peas, parsley, garlic, red chili peppers - serves 3- 4 people

Drain a 12 ounce can of chick peas and set aside

Crush or mince 4 garlic cloves

Cut a fresh squeezed lime in half

Pinch of salt, black pepper and turmeric

Chop 1 tablespoon of parsley

2 table spoon of extra virgin olive oil

In a small pan sauté 1 tablespoon of olive oil, parsley, garlic and chili peppers and cook for 3 minutes.

In a bowl, mix the chick peas, 1 tablespoon of olive oil and all of the ingredients (squeeze lime over the quinoa and mix). Sprinkle salt, pepper, turmeric.

Quinoa with black olives, parsley, feta cheese - serves 3 - 4 people

For Quinoa repeat step 1

1/4 cup of black olives thinly chopped

1 tablespoon of parsley chopped

Crumbled feta cheese

2 tablespoons of extra virgin olive oil

Pinch of salt and black pepper

1/2 of fresh squeezed lemon

Follow step 1 for cooking the quinoa and once it’s done mix the ingredients in a bowl with one tablespoon of olive oil and serve.

Quinoa with zucchini, roasted peppers, shallots, parsley - serves 3 - 4 people

For Quinoa repeat step 1

4 small Zucchinis thinly sliced (you can use a mandoline slicer)

1/4 cup pf roasted peppers (thinly sliced)

1 small minced shallot

2 tablespoons of olive oil

Pinch of salt and black pepper

Pour 1 tablespoon of olive oil in a skillet and add the sliced zucchini, roasted peppers, garlic and cook for 5 minutes or until zucchini is browned.

Follow step 1 for cooking the quinoa and once it’s done mix the ingredients in a bowl with one tablespoon of olive oil and serve. Sprinkle salt and pepper.
